1. 1 1/2 cups plain flour (white or wholemeal)

  2. 1/2 cup Chickpea flour

  3. 1/4 cup olive oil (plain or infused)

  4. 1/2 cup warm water (approx)

  5. Salt to taste (I use a teaspoon)

  6. Herbs to taste


  1. Place flour, salt and herbs in a mixing bowl and mix together

  2. Pour in olive oil and mix through with spoon

  3. Slowly add warm water and mix with spoon until it forms a dough as picture below

  4. You can either tear bits off straight from the bowl and shape them in your hand or...

  5. Flatten with a rolling pin and cut into shapes with a knife or just tear off

  6. Bake in a sandwich press between 1 to 2 minutes until brown


  1. The thinner the dough when it goes in the press, the crispier it comes out

  2. Add a teaspoon or so of baking soda to the mix to make it fluffier, like pita and cook on griddle

  3. If you want a sweet cracker, use plain olive oil and brush the dough very lightly with honey as it goes into the press.
